These are very nice to make on a cold January afternoon


Ingredients

Makes 12 servings

  • 4oz plain flour
  • 4oz light brown sugar
  • 4oz dessicated coconut
  • 5 oz rolled oats
  • 4oz butter
  • 2 tbsp golden syrup
  • ½ tsp bicarbonate of soda
  • 2 tbsp boiling water

Preparation (Some HTML is OK)

Preheat oven to 180'c (160'c for fan ovens).
Mix together flour, sugar, coconut and oats in a large mixing bowl.
Melt butter and golden syrup together over a low heat in a small saucepan.
Dissolve the bicarb in the boiling water and add to the butter and syrup mixture.
Stir the liquid into the dry ingredients.
Cover 2 baking trays with greaseproof paper and place big teaspoon size dollops onto the baking trays (should make 12-15 biscuits).
Cook for 15-20 mins until turning brown on top. If you can remove the entire sheet of greaseproof paper (with the biscuits still on top) off the baking trays as soon as they come out of the oven to stop them over-cooking underneath.
