A beautifully tasty cake that can be made with any stewed fruit such as pear, apple or whatever you fancy. It doesn't need a lot of mixing so is really really simple.


Ingredients

Makes 8 servings

  • Base
  • 3 cups self-raising flour
  • 2 cups caster sugar
  • 2 small pots natural yoghurt
  • 1 egg
  • ½ cup vegetable oil
  • Fruit
  • Approx 4 apples or pears stewed
  • Topping
  • 50g butter
  • 3 heaped tbsp plain flour
  • 2 heaped tbsp icing sugar

Preparation (Some HTML is OK)

Mix all ingredients together for base in large bowl. This will be a big gooey lumpy mess.

In another bowl crumble the topping ingredients together until you get a breadcrumb consistency.

In a large non stick cake tin pour in the base mix. Layer on the stewed fruit and finally add the topping. Bake at 160'c (fan) for 45mins to 1 hour. Should be going crunchy and brown on top and looking cooked but moist in centre.
