This tray-bake is delicious, and always keeps people guessing as to the main flavour. It will keep for a couple of days in an airtight container, or will freeze.
Ingredients
Makes 18 servings
- 10 oz plain flour
- 1 lb dark brown sugar
- 1 tsp baking powder
- pinch salt
- 1 tsp nutmeg
- 4 oz butter
- 1 egg
- 250ml milk
- ½ tsp bicarbonate of soda (baking soda)
- couple of handfuls of walnut pieces
Preparation
Preheat oven to 180C
Mix the sugar, flour, nutmeg and baking powder, then rub in the butter. Press half into the bottom of a greased baking tin / tray (works in anything from 9x9" to 9x13" - just need to vary the baking time). Beat together the milk, bicarbonate and egg, then stir into the other half of the mix, pour into the pan.
Scatter over the walnuts and bake - anything from 25 mins for a large pan to 45+ for a 9x9 - until a toothpick comes out clean.
