This fresh tasting salad is a great addition to any Asian spread. I like it as a side to chicken or soup.


Ingredients

Makes 4 servings

  • 1 cucumber (sliced into thick match sticks)
  • 3 spring onions, chopped finely
  • 1 teaspoon fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • Small bunch coriander (roughly chopped)
  • 1 small red chili (roughly chopped)
  • Sesame seeds

Preparation (Some HTML is OK)

Slice the cucumber into thick match sticks and place into a bowl. Add all of the other ingredients, stir to coat cucumber and serve.

    if you are vege then you can change the fish sauce to soy sauce and it works well.
