Stolen from Adrian who stole it from somewhere else.


Ingredients

Makes 4 servings

  • 8 slices of back bacon
  • 4 eggs
  • Vegetable Oil

Preparation (Some HTML is OK)

1. Preheat the oven to 190 degrees C.
2. Using the vegetable oil, brush lightly inside four holes in a muffin tray.
3. Remove the "tail" bit from each slice of bacon and any excess fat.
4. Line each muffin hole using two pieces of the back bacon (see photo).
5. Crack an egg into each of the four bacon-lined hole.
6. Lightly season and then place in the oven for 25 - 30 mins (or until the egg has cooked through).
7. Serve with cooked mushrooms and cherry tomatoes (you can cook these in a separate dish while your house is cooking).
