Its pasta bake


Ingredients

Makes 4 servings

  • 1 tbsp olive oil
  • 1 onion (chopped finely)
  • 1 clove garlic (chopped finely)
  • 1 red pepper (chopped) (optional)
  • 1 pack chopped pancetta or bacon (about 150-200g)
  • 1 tin tomatoes
  • 1 squirt tomato paste
  • black pepper
  • 2 capfuls red wine vinegar
  • 2 tbsp double cream (optional but def adds something)
  • 3 mugs pasta
  • 2-3 handfuls grated cheese (cheddar, parmesan, mozzarella)

Preparation (Some HTML is OK)

In a big saucepan heat the oil gently and add the chopped onion, garlic and pepper and a little salt. Fry very gently until translucent (5-10 mins). Turn the heat up and fry the bacon (2-3 mins). Add the tinned toms, tom paste, black pepper and red wine vinegar. Bring to a gentle simmer and cook, stirring occaisionally for 30 mins. The sauce can be frozen at this point.
Boil the pasta for 2 mins less than packet instructions. Stir in the cream to the tomato sauce and then stir in the pasta making sure it is really well coated.
Pour the pasta mixture into a baking dish (or cheat and use an oven proof saucepan) and cover with the grated cheese.
Bake at 180'c for 10-20 mins - until the cheese has melted and is just starting to turn brown.
