This is a great appetizer if you're in a hurry. There are few things better than spreadable cheese.


Ingredients

Makes 6 servings

  • 2 packages of greek feta cheese
  • 2 vine tomatoes
  • 1 clove garlic minced
  • Pinch sea salt
  • Pinch ground pepper
  • ¼ cup olive oil
  • ½ teaspoon red pepper flakes
  • ½ teaspoon lemon zest
  • 2 teaspoons of fresh thyme

Preparation (Some HTML is OK)

Preheat your oven to 350F. Add all of the ingredients (except the feta and tomatoes) to a mortar and pestle and grind into a paste. Cut the feta into chunks and place them in a small baking dish. Poor the paste over top of the feta and smear it around until the top of each is covered. Dice the tomatoes and spread evenly over the top of feta. Place the baking dish into the oven and bake for 15mins until the cheese is soft. Serve with ciabatta or pita bread.
