We're right in the middle of BBQ season and sometimes a simple BBQ chicken just hits the spot. Serve with a salad and some new potatoes.


Ingredients

Makes 4 servings

  • 4 chicken legs
  • For BBQ sauce
  • ½ cup vegetable oil
  • 1 ¼ cups water
  • 2 tablespoons of chopped onion
  • 1 clove of garlic crushed
  • 1 ½ teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon hot chili powder
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • ½ teaspoon dry mustard
  • 2 tablespoons white vinegar
  • 1 teaspoon worcestershire

Preparation (Some HTML is OK)

Combine all ingredients for the sauce. Simmer for 30 minutes. Remove onion and baste sauce on to chicken. Place chicken on the BBQ and continue to baste as the chicken is cooking.

    I find par-boiling the chicken pieces for 10 mins before basting and barbecuing ensures the chicken is cooked through to the bone without burning the skin
