Great budget meal ... easy to prepare ... packed with lots of flavour!


Ingredients

Makes 4 servings

  • 450g lean beef mince
  • 1 onion, peeled & chopped
  • 2 large garlic cloves, peeled and finely chopped
  • 2tsp ground paprika
  • 400g can of peeled & chopped tomatoes
  • 2tbsp tomato puree
  • 1tbs Worcestershire sauce
  • Seat salt & freshly ground black pepper
  • 3tbsp chopped coriander leaves
  • 4-6 tortillas
  • 100g grated mature cheddar cheese

Preparation (Some HTML is OK)

1. Preheat the oven to 200C

2. Heat a large, shallow, non-stick frying pan until hot and cook the mince, onion and garlic for 5 minutes until brown. Add the paprika, canned tomoatoes, tomato puree, Worcestershire sauce. Season.

3. Bring to the boil, reduce the heat & simmer for 10-15 minutes. Stir through the coriander.

4. Place a tortilla on a large non-stick baking tray and spoon over a portion of the mince mixture evenly and a handful of cheese. Repeat with the remaining ingredients and top with the remaining cheese.

5. Bake for 10 minutes or until cheese melts. Cut into quarters and serve with salad leaves.
