classic simple starter or light snack. olive or sun dried tomato bread is excellent.
Ingredients
Makes 2 servings
- good bread. ciabatta or some other mediterranean style works best. 2 thick slices per person.
- 1 good sized tomato or about 6 cherry tomatoes
- 1 medium red onion
- 2 cloves fresh garlic
- extra virgin olive oil
- fresh basil (optional)
Preparation
finley chop the red onion and lump up the tomatoes, you want the tomatoes chunky, not mushy.
toast the bread using a griddle pan/bbq/open fire or as a last resort, a toaster
peel the garlic and rub generously over the toast; for more flavour cut the garlic lengthways down the middle for this bit.
mix the onion and tomato and pile on the garlicy toast
drizzle with olive oil
garnish with the basil and serve while warm.
