Jalfrezi is a tasty curry with a nice thick sauce. This is a fairly quick dish to make.


Ingredients

Makes 2 servings

  • 2 or 3 chicken breasts, diced (I am told that thighs are better for this, but Sainsburys never have any)
  • 1 onion
  • 1 bell pepper (green)
  • 6 or so fresh tomatoes
  • A squirt of tomato purée
  • Fresh green chillies to taste (I also use a bit of cayenne pepper)
  • 1 cube of chicken stock
  • 3 cloves of garlic
  • Bit of ginger
  • 1 desert spoon of turmeric
  • Bunch of coriander, de-stalked and chopped
  • Garam Masala

Preparation (Some HTML is OK)

Add the turmeric, 1 crushed clove of garlic and a quarter of the ginger (sliced and crushed in a garlic crusher) to some oil and marinate the meat in it. Overnight is ideal but I don't plan these meals nearly far enough in advance.

Heat up a wide, shallow pan (sauté pan or similar) to a high heat. Fry the chicken and onions for 2 minutes, then add the pepper and chilli and fry for another minute or so.

Add the tomatoes, purée, garlic, ginger, chicken stock, and some masala. Reduce until the sauce clings to the chicken. Add a bit more masala and serve.
