Perfect for the big football game, Chicken taco rice is a hearty, hungry man's chip dip.
Ingredients

- 1 lb. chicken diced
- 2T. oil
- 1 c. chicken broth
- 8 oz tomato sauce
- 1 pkg taco seasoning
- 1 can corn drained
- 1 can black beans, drained, rinsed
- 1 ½ c. minute rice
Preparation
stir fry chicken in oil. add broth, tomato sauce, taco mix. bring to a boil. simmer 5 min. add corn, beans. stir in rice. cover. remove from heat 5min. server with taco chips, cheese, and sour cream.
