We eat a lot of chicken. This is one of my favourite (tasty AND easy) ways of cooking it. We always have all the ingredients lying around.


Ingredients

Makes 2 servings

  • 2 chicken breasts
  • ⅓ cup chicken stock (made with half a stock cube)
  • 1 orange
  • Approx 15 pitted black olives
  • Pinch of dried sage
  • Knob of butter

Preparation (Some HTML is OK)

In a lidded frying pan heat a splash of olive oil and a teaspoon of butter. When the butter starts to fizzle add the chicken breasts. Cook for 2 mins each side on a med-high heat. Turn the heat down and add the stock, orange (quarter the orange, cut out the pith, cut the flesh out of the skin and roughly slice), olives and sage. Put the lid on and cook for 10 mins. Add another small knob of butter. Wait for it to melt and stir in. Serve with mash to soak up the gravy and brocolli or peas.
