Ingredients

Makes 12 servings

  • Dough
  • ½ cup Milk
  • 4 TBSP unsalted butter cut into pieces
  • 1 package (2 1/4 tsp) dry active yeast
  • ½ cup warm water
  • ⅓ cup sugar
  • 2 large eggs
  • 1 ½ tsp salt
  • 3 1/4 - 3 3/4 all-purpose flour
  • Filling
  • ½ cup brown sugar
  • 2 TBSP ground cinnamon
  • ⅓ cup melted butter (or more if you like)
  • ½ cup raisins
  • ½ cup chopped nuts of choice (or not)

Dough
Heat milk and butter in a small saucepan until butter melts.
Meanwhile...
Sprinkle yeast over warm water in the bowl of a large mixer. Beat in sugar and eggs and mix at a low speed to blend. Add salt, milk mixture and 2 cups of flour, mix at medium speed until blended well. Switch to a dough hook and add about 1 1/4 cups of flour and knead on medium-low speed, adding more flour sparingly if dough sticks to sides of bowl, until the dough is smooth and comes away from the sides of the bowl -will take about 10 minutes or so.
Put the dough on a floured countertop and feel it with a clean hand. If it is sticky, add flour and knead until it is smooth and soft - no more than 1/2 cup additional flour.
Put the dough into a lightly greased bowl and let it stand for 2-2.5 hours, or until it doubles in size.
Get your frustrations out by punching dough once in the centre. Put it onto a floured countertop making sure you don't fold it. Let it sit for about 10 minutes to relax.
Grease a 9x13 baking pan and set aside.

Buns
Roll the dough out on the counter making a 12x16 inch rectangle.
Brush dough liberally with butter and sprinkle on sugar and cinnamon evenly - leave a 1" border along the outside. Sprinkle on nuts and raisins evenly.
Roll the dough along the long side and pinch the dough with fingertips to form a seam - don't seal the ends.
Use dental floss, thread or a really fine knife to cut the roll into 12 buns, placing them swirl side up in the baking pan.
Cover them loosely with plastic wrap and let sit for 1 hour, they will grow and end up touching.
Set oven to 350 degrees.
Bake until golden brown, about 20-30 minutes.
