Tasty chicken and sausage casserole. The beans are entirely optional.


Ingredients

Makes 4 servings

  • 1 tsp olive oil
  • 1 large red onion
  • 1 clove garlic
  • 2 chicken breasts
  • 2 sausages
  • 3 glugs of cooking sherry
  • 1 sprig rosemary (if you have it)
  • ½ cube chicken stock
  • 1 pepper
  • 1 tin tomatoes
  • 1 tin cannellini beans

Preparation (Some HTML is OK)

In a large saucepan heat the oil and add the onions (sliced into half rings) and chopped garlic. Chop the chicken and sausage into chunks and add to the pan together with the chopped pepper. Fry gently for 5 mins. Add the cooking sherry and about the same amount of water + half a chicken stock cube + rosemary. Add tin of tomatoes and cannellini beans and simmer on a low heat for 30 mins (or in oven at 180'c for 30 mins). Serve with rice or potatoes.
