Excellent for a light lunch or as a starter. Dead quick to cook.


Ingredients

Makes 4 servings

  • Wholemeal pasta, 50-75g per person
  • 1 clove of garlic - finely chopped
  • 4 shallots, or half an onion - finely chopped
  • 25g butter/ olive oil
  • 8 king scallops, with roe - halved and separated from roe
  • 1tbsp lemon juice
  • 100g frozen cooked prawns
  • handful of chives - chopped
  • 150ml of single cream

Preparation (Some HTML is OK)

1. Put the pasta on to cook. Aim to have it ready and drained by step 5.

2. In a large saucepan fry the garlic and shallots in the butter for a couple of minutes until soft.

3. Add the scallops, chives and lemon juice and cook for 3-4 minutes

4. Add the prawns, cook for 2 mins until defrosted

5. Add the cream. It will be quite runny. Cook for 2 mins.

6. Add the pasta, the starch will thicken the sauce. Mix together and serve garnished with parmesan.
