Ingredients

Makes 4 servings

  • 4 tbsp Nam Pla
  • juice of 2 limes
  • 2 tbsp muscovado sugar
  • 1 tbsp sesame oil
  • 450g minced pork
  • ½ onion, finely diced
  • 1 tsp lemongrass paste
  • 1 red chilli, finely chopped
  • 2 garlic cloves, crushed
  • 2 spring onions, sliced
  • cooked noodles to serve
  • handful of shredded coriander to garnish

Preparation (Some HTML is OK)

1. Make the sauce by mixing together the nam pla, lime juice, sugar and sesame oil. Set aside.
2. Heat a large frying pan and fry the pork and onion for 10 minutes until browned, then place in a sieve to drain off the excess fat. Return to the pan and continue to fry the pork for another 5 minutes or until golden.
3. Add the lemongrass, chilli and garlic, fry for 2 to 3 minutes, then add the sauce and spring onions. Heat through and served with the noodles and coriander.
