Curry seems to be a bit of a favourite here on forkd, so I thought I'd post my curry powder. It's nothing special, but there's something a bit magical about making your own. It stores well for months, but make sure the container's airtight.


Ingredients

Makes 10 servings

  • 2 tablespoons whole cumin seeds
  • 2 tablespoons whole coriander seeds
  • 2 teaspoons whole black pepper
  • 5 whole cloves
  • dried red chillies to taste (2-3?)
  • 2 teaspoons mustard seeds
  • 1 teaspoon whole fenugreek
  • 1 teaspoon ground turmeric

Preparation (Some HTML is OK)

Set a frying pan on a fairly low heat. Once it's warmed up, add all the ingredients bar the turmeric. Keep watching, after a few minutes the colour of the spices should change, and they will start to smell. Take off the heat, let them cool for a minute or so, then grind them up with the turmeric.
