Really scrummier cake


Ingredients

Makes 6 servings

  • 5 oz softened butter
  • 7oz caster sugar (golden caster sugar if you've got it)
  • 2 eggs
  • 3 mashed bananas
  • 1 tsp vanilla extract
  • 10 oz self raising flour
  • 2 oz sultanas
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • juice of half lemon

Preparation (Some HTML is OK)

Cream butter and sugar. Beat in eggs, vanilla and bananas. Fold in flour and spices. Stir in lemon and milk. Grease an oblong loaf tin. Pour into tin. Scatter over chopped walnuts and/or cinnamon if you have them. Cook in pre-heated oven for 50-60 mins at 160'C. Eeeeasy.
