This fish recipe can be prepared in very little time IF you have the ingredients to hand. In fact the base can be made and any firm white fish can be added just before eating after poaching the fish. It is a favourite of family & friends & you can make it as hot as you like.


Ingredients

Makes 4 servings

  • 4 steaks of cod, or another firm white fish.
  • 1 large onion, 4-6 cloves of garlic, 2" piece of ginger, all threee finely chopped. I tea mug of greek or natural yogurt, 1 Tbs. gram flour though plain flour will do. 1Tbs. of whole cummin seed, 1 Tbs. of preferably freshly ground cummin, fennel & coriander seed powders, 1 Ts. of turmeric, 1/2 Ts. of chillie powder (more if you like it hot), small bunch of chopped fresh coriander leaves. 1 tin of chopped tomatoes.

Make a paste of 1 Tbs. of yogurt with the flour then blend rest of the yogurt to make a creamy mixture. In a non stick saucepan heat 4 Tbs. of peanut or any vegetable oil & fry the onions till translucent, add the whole coriander fry for a minute, add the other spices, fry a little , add ginger, fry for 1 min. add garlic & fry till onion just begins to be brown. Add the chopped tomatoes & cook till a nice thick paste is formed. Now add all the yogurt and cook for a couple of minutes. Stirring is essential throughout the whole procedure. The base is now ready for the fish to be added and cook till the fish is done, this will not take long. Add the chopped coriander leaves before serving. If you are adventurous, you can slit 4 or 5 green chillies & add them before the tomatoes. Serve with boiled basmati rice.
