A great recipe to make with the kids as there's lots of creative dough cutting to do. A great way to make some authentic gingerbread men. Dead easy and tasty too. You'll need the right shaped cutter and some creative decorations if you're making gingerbread men (we didn't, so biscuits it was)
Ingredients
Makes 8 servings
- 8 oz (200g) plain flour
- 2 oz (50g) butter or margarine
- 2 tsp ground ginger
- ½ tsp ground cinnamon
- ½ tsp bicarbonate of soda
- 4 oz (100g) soft light brown sugar
- 1 egg
- 1 tbsp golden syrup
Preparation
If you are using real butter you need to warm it to room temp first (microwave on defrost for 30 secs should do it).
In a large bowl combine all your ingredients and start to mix together. At some stage you'll have to mix with your hands - you should have a nice firm dough, if its at all sticky add a bit more flour.
Flour the table first and roll out the dough so its about 1/2cm thick then cut using whatever shaped cutters you like.
Take one large or two small baking trays, cover with some greaseproof paper and then lightly grease the paper with butter or margarine (the only sure fire way to make sure they come off easily).
Spread the biscuits over the baking trays as you cut them.
Cook at 180'c (160'c fan) for 8-10 mins. Take them out as soon as they start to turn golden brown on top.
