A classic gremolata, mixed with olive oil and bread crumbs, makes a great crust on cod or any other white fish. Light, healthy and delicious!


Ingredients

Makes 4 servings

  • 1 lemon
  • 3 cloves garlic
  • small bunch of flat-leaved parsley
  • ½ tsp salt
  • 100g breadcrumbs made from slightly stale bread
  • 3 tbsp olive oil, plus extra to drizzle
  • 4 thick cod steaks

Preparation (Some HTML is OK)

Preheat the oven to 200C

Finely chop together the garlic, parsley and the zest from half the lemon.

Mix with the salt and breadcrumbs. Mix in the juice from the lemon and the 3 tbsp olive oil.

Put the cod steaks on to a lightly greased baking tray (or line it with non-stick foil - fantastic stuff!), and season with salt and pepper.

Press onto the top of the cod steaks, and drizzle with a little extra olive oil.

Bake for 15 minutes (or less for thin steaks / fillets), and serve.
