Ingredients
Makes 36 servings
- 1 cup whole wheat flour
- ¾ cup flax seed
- ¾ cup wheat bran or oat bran (or a mix)
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cup of mashed banana (4-5 frozen and defrosted bananas)
- ¾ cup brown sugar
- ¾ cup buttermilk
- 1 beaten egg
- 1 cup of raisins (add more if you want)
Preparation
Mix all of the ingredients together. Mix until you have a smooth mixture and then fill your muffin trays. Each little cup should be 2/3 full. Use muffin papers if you want an easier clean-up. Preheat the oven 400F and cook for 20-25 minutes. Stick and tooth pick in a muffin and if nothing sticks to it when you pull it out the muffins are ready.
