Quick, easy, delicious way to use up all of those tasty heirloom tomatoes in your garden!


Ingredients

Makes 0 servings

  • 5 lb assorted heirloom tomatoes, chopped
  • 1 red onion, diced
  • ½ c fresh basil, coarsely chopped
  • 2-3 tbsp olive oil
  • 2-3 tbsp white balsamic vinegar
  • salt and fresh ground pepper
  • 1-2 loaves ciabatta bread
  • aged Parmigiano-Regianno cheese, shaved

Preparation (Some HTML is OK)

Mix the tomatoes, onion, and basil in a large bowl, then drizzle with oil and vinegar and toss. Season with salt and pepper to taste.

Slice bread into 1" thick pieces, place on a baking sheet and spray lightly with olive oil. Broil in the oven until they're toasted and lightly browned. Top with bruschetta mixture. Top each piece with shaved aged parmesan and serve immediately.
