A simple one pan easy supper - based on Tangy tomato rice.


Ingredients

Makes 2 servings

  • 5 fluid ounces of rice (or just your standard amount for 2 people)
  • 1 tbsp Oil
  • ¼ tsp Cumin seeds
  • 1cm of cinnamon
  • 2 cloves
  • 1 bay leaf
  • ½ onion, finely chopped
  • 2-4 whole birds eye chillis
  • 4 cloves garlic, finely chopped
  • ½ tsp mild Chilli Powder
  • 1 tsp paprika
  • ½ tsp salt
  • 2 fresh tomatoes (or at a push some tomato puree and water)
  • some prawns - fresh or frozen and defrosted

Preparation (Some HTML is OK)

Cook the rice by your preferred method (mine is microwave rice cooker).

Meanwhile, in a pan heat the oil. Add the cumin seeds, bay leaf, cinnamon and cloves. After about 1 minute add the chopped onions, whole chillis and garlic and fry until the onions are a golden brown (about 5 mins).

Add the chopped tomatoes, chilli powder, paprika and salt. Fry gently for 7 minutes.

Add the prawns and rice and cook gently until they are all heated through (another 5 mins)
