Came across this recipe on a Facebook website called Forgotten Bookmarks ...

It reminds me of the cakes my Gran used to make ... seriously good for the soul!


Ingredients

Makes 8 servings

  • 4 large apples
  • 5 tbs sugar
  • 3 tsp cinnamon
  • --- let stand
  • 3 cups plain flour
  • 3 tsp baking powder
  • ½ tsp salt
  • --- sift together
  • 4 eggs
  • 2.5 tsp Vanilla Essence
  • 1 cup extra virgin olive oil
  • ¼ cup orange juice
  • 2.5 cups sugar
  • --- mix well

Preparation (Some HTML is OK)

1. Peel and slice apples - add the sugar & cinnamon

2. Make cake mixture - add dry sifted ingredients. Mix well with wooden spoon.

3. Grease ring-pan. Arrange cake mixture and apples in layers, ending in cake mix (cover last layer well or apples will burn).

4. Bake for 1 & 3/4 hours at 350F or 180C until knife comes out clean.

Note: Cake tastes better after 2 days
