Very easy and tasty one-dish meal. If you prefer, you can use low fat sausage, but most of the flavor comes from the kielbasa.
Ingredients
Makes 4 servings
- 16 oz smoked kielbasa sausage, sliced
- 6 medium red potatoes, diced
- 1 small yellow or white onion, diced
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
Preparation
Heat oil and onion in a large skillet over medium heat. Place kielbasa and potatoes in the skillet. Cover, and cook 25-30 minutes, stirring occasionally, until potatoes are tender. ( I stir at least every 5 minutes, because the potatoes WILL stick.)
Mix red and yellow peppers into the skillet. Continue cooking about 5 minutes until peppers are tender.

Hmm. I'm going to go wild and try adding tumeric and a touch of chilli. Or maybe use a spicy Spanish sausage instead.
