Nothing to do with nuts but, in fact, a lovely little biscuit / cake type thing (too hard to be a cake and too soft for biscuit) that my Grandma and Mam used to make. Lovely sandwiched together with jam, lemon curd, marmalade and/or butter cream.


Ingredients

Makes 12 servings

  • 4 oz margarine
  • 4 oz sugar
  • 4 oz self raising flour
  • 4 oz cornflour
  • 1 egg
  • pinch of salt

Preparation (Some HTML is OK)

Cream together the margarine and the sugar. Add the egg and beat in. Work in the dry ingredients to a firmish paste - this will be firmer than if it was a cake mixture. Spoon on to a greased baking tray (or sheet) with a teaspoon. Flatten your dollops slightly with the back of the teaspoon. Cook in a preheated oven at 150 - 160 C for 20 mins. They should be firm to the touch if you press lightly when they are ready.

Allow to cool and sandwich together with your desired filling.
