Make this dip in layers in a salad bowl or deep baking dish ... clear is best.
Recreated from a recipe my American host family used to make when I was an exchange student in Minnesota ... very moorish & messy!
Makes 6 servings
- 2 ripe avocados
- Juice of half a lemon
- 415g can refried beans
- 2 spring onions
- 3 - 4 tomatoes
- 270g jar mild/medium salsa
- 284ml low fat sour cream
- 125g packet of low fat shredded mozzarella cheese
- Black olives, pitted & sliced for garnish

1st Layer: Peel avocados and remove pit. Mash with lemon juice.
2nd Layer: Fry refried beans and spread on avocado.
3rd Layer: Chopped spring onions
4th Layer: Diced tomatoes.
5th Layer: Salsa.
6th Layer: Dollop sour cream and spread carefully over salsa.
7th Layer: Shake mozzarella cheese over top and cover with olives.
This can be served immediately but tastes better chilled. Serve with corn chips / Doritos.
