Great for the oven or BBQ!
Ideally marinate the chicken overnight for maximum flavour.


Ingredients

Makes 4 servings

  • 8 chicken pieces
  • Marinade
  • 2tbs olive oil
  • 2tbs balsamic vinegar
  • Handful of thyme, chopped
  • 2tbs chopped onions
  • 4 un-peeled garlic cloves, smashed
  • sea salt & freshly ground black pepper

Preparation (Some HTML is OK)

Put the chicken in a large bowl with the marinade ingredients and a generous grinding of black pepper. Toss so everything is well coated, cover and set aside for at least an hour, preferably overnight.

OVEN:
1. Preheat oven to 220C. Toss the chicken so it is well coated in the marinade, season with plenty of salt and place at the top of the oven.

2. Turn gently twice while it is cooking (should take about 30 mins). Remove from the oven and allow to rest in a warm place for 15 minutes then serve.

BBQ:
Cook over very low heat for approx 45 mins, turning twice, then serve
