Okra is a fantastic and often overlooked vegetable. Cooked right (like this recipe) it's tremendously tasty and a real treat. A lovely side dish for any meal.


Ingredients

Makes 2 servings

  • 100g Okra
  • 1 small onion
  • 1" thumb ginger
  • 2 tomatoes
  • 1 tsp cumin seed
  • ½ tsp mustard seed
  • ½ tsp ground coriander
  • 1 tsp ground cumin
  • ¾ tsp salt
  • 1 tbsp ground nut oil

Wash the okra and pat dry with kitchen towel. Top and tail each one, and cut into roughly inch long pieces.

Peel the onion and halve it. Then cut each half into thin strips. Peel and chop the ginger into narrow strips too.

Get the oil good and hot in a wide lidded pan. Put the cumin and mustard seeds into the pan and wait until they pop. When they do add the onion and ginger strips and fry until the onion softens and goes translucent (roughly 5 minutes).

While you're waiting chop the tomatoes into a small dice. When the onions are ready add the tomatoes, the ground cumin, ground coriander, salt and pieces of okra. Give the pan a good stir, turn the heat down, and cover.

Leave untouched for around 12 minutes, testing the state of the okra near the end. When the okra pieces are similar texture to al dente penne you are ready to serve.
