Dead quick to prepare and cook, this is a healthy alternative to the fish and chip shop.


Ingredients

Makes 2 servings

  • 2 Plaice fillets or other flat fish
  • 100g Parmesan, roughly chopped.
  • 2 slices of (nearly stale) bread, roughly chopped
  • 50g butter or olive oil
  • Herbs - e.g. dill, thyme, parsley

Preparation (Some HTML is OK)

1. Preheat the oven to 220oC

2. Blend the bread and parmesan in a food processor until breadcrumbs

3. Melt and add the butter (tasty), or the olive oil (healthy)

4. Add random herbs to suit fish. Careful with the dill, it's quite over-powering. Blend again to mix.

5. Place the plaice on a greased flat baking sheet and cover with the breadcrumbs, firm down.

6. Oven roast quick and hot according to fish and taste. Plaice is c. 10mins @ 220.
