Thick wholesome pea and ham soup.


Ingredients

Makes 4 servings

  • 400g yellow or green split peas, rinsed and drained
  • 2 litres water
  • 1 chunk of smoked pork belly or a ham bone (from a cooked ham)
  • 1 carrot, chopped
  • 1 onion, chopped

Preparation (Some HTML is OK)

1. Rinse the peas under running water and put them in a large pot. Add the water and bring to the boil. Skim off the scum as it forms on the surface.

2. Add the carrot, onion and smoked ham chopped into large chunks to the peas. Season, but be careful with salt as smoked ham will add plenty of saltiness to the soup. Cover the pot and return to a simmer and cook for 40 minutes or till the peas are tender.
3. Purée the soup. Return to a clean pan, reheat and check the seasoning. Ladle into bowls, garnish with chopped ham and serve with crusty baguette.
