I was quite proud of this: it looks really fancy. Made it for a hangover and we ate it warm. A bit like pizza in a plait. But I believe its supposed to be eaten cold while out on a fancy picnic. (you do need a bread maker)


Ingredients

Makes 4 servings

  • Bread
  • ½ tsp yeast
  • 300g (11oz) strong (bread) white flour
  • ½ tbsp sugar
  • 1 tbsp butter
  • 1 tbsp milk powder
  • 1 tsp salt
  • 240ml water
  • Filling
  • 200g cubed pancetta (or chopped bacon or similar)
  • 1 onion (finely chopped)
  • 100g (4oz) grated cheese
  • 1 tomato (sliced)
  • 1 egg

Preparation (Some HTML is OK)

Combine bread ingredients in your breadmaker and use the basic dough program.

Fry the pancetta until starting to brown then add the onion and fry gently until soft (about 5 mins).

Roll dough out until size of a big baking tray (12"x14"). Place on the baking tray. On long edges cut dough at 1" intervals, leaving centre (3-4") uncut.

Spread pancetta and bacon on the uncut part of the dough. Top with the grated cheese and sliced tomato. Fold up alternate strips to form a plait. Brush with beaten egg.

Cover with cling film and leave to rise for at least 1/2 hour. Bake at 180'c (fan) for 30-40 mins until golden brown.
