Quick, cheap, easy and really delicious! Close your eyes and you're in Sicily ...


Ingredients

Makes 4 servings

  • 2 tbls olive oil
  • 8 anchovy fillets
  • 3 cloves garlic, finely chopped
  • 2 x 400g cans of whole peeled tomatoes
  • 500g penne pasta (uncooked)
  • Freshly ground black pepper for seasoning
  • 4 handfuls fresh spinach leaves (optional)
  • Grated parmesan cheese for garnish (optional)

Preparation (Some HTML is OK)

1. Heat oil in non-stick pan and add anchovy fillets, to melt slowly over a low heat until dissolved.
2. Add garlic and soften.
3. Add both cans of tomatoes and break down in pan until mixture it resembles sauce. Simmer for 10 minutes.
4. Meanwhile cook penne as instructed on the pack (al dente is best)
5. Drain penne well and stir into tomato sauce until blended.
6. Add fresh spinach leaves and mix until just wilted then serve!

    slightly modified with the addition of mussels and a load more anchovy but v nice.
