Quick, cheap, easy and really delicious! Close your eyes and you're in Sicily ... Bruschetta is a fantastic starter to this.


Ingredients

Makes 2 servings

  • 2 tbls olive oil
  • 50g anchovy fillets in olive oil
  • 3 cloves garlic, finely chopped
  • 400g can of whole peeled tomatoes
  • 100g cooked and shelled mussels
  • 150g spaghetti (uncooked)
  • Freshly ground black pepper for seasoning
  • 4 handfuls fresh spinach leaves (optional)
  • Grated parmesan cheese for garnish (optional)

Preparation (Some HTML is OK)

1. Seperate the anchovies and put them in a non stick pan with the oil, melt slowly over a low heat until dissolved.
2. Add garlic and soften.
3. Add the tomatoes and break down in pan until mixture it resembles sauce (alternatively run them in a blender to roughly chop). Add the mussels and grind in black pepper to taste, simmer for about 10 minutes, adding the spinach for the last minute.
4. Meanwhile cook spaghetti as instructed on the pack (al dente is best)
5. Drain penne well and stir into tomato sauce until blended.
6. Serve and accept praise from dinner companions :)
