Adapted from an old Delicious magazine, this made a lovely starter at a recent dinner party.
If you do cook this for a dinner party, you might want to include 10 minutes assembly time :)
Ingredients
Makes 0 servings
- 6 large eggs
- 150ml milk
- 4 spring onions, finely chopped
- 40ml olive oil
- 180g plain flour
- 1 tsp baking powder
- 150g mashed potato
- 1 tsp lemon juice
- Knob of melted butter for frying
- For the toppings pictured, I used:-
- Hollandaise sauce
- Asparagus tips, blanched
- Creme fraiche
- Smoked salmon
- Fresh chives, snipped
- Goats cheese
Preparation
1. whisk all the ingredients together in a large bowl until smooth, then season well with sea salt and freshly ground black pepper.
2. Brush a non stick frying pan with melted butter and place over a medium heat.
3. In batches, add 1 tbsp of mixture and allow to spread.
4. Cook for 1 minute on each side.
For the toppings I used, I put a blob of hollandaise sauce and then two asparagus spears on one pancake, smoked salmon and creme fraiche with chives on another and goats cheese with chives on the last one.
Serve with a slice of lemon and a small amount of freshly ground black pepper.
