Saudi Arabian recipe, single pan and very delicious. Very similar to some north African dishes I've had.


Ingredients

Makes 4 servings

  • 5 tablespoons butter
  • 2 lbs lamb cut into cubes
  • 2 medium onions (we used 1)
  • 4 cloves garlic diced
  • ¼ cup of finely chopped fresh coriander leaves (cilantro)
  • ½ teaspoon cinnamon
  • pinch of pepper
  • pinch all spice (we took this out)
  • 1 cup prunes, pitted and cut into quarters
  • 1 cup rice
  • salt

Preparation (Some HTML is OK)

In a saucepan, melt the butter and saute the meat until it begins to brown. Stir in the onions, garlic and coriander; then saute further until the onions begin to brown. Add all the remaining ingredients except the prunes and rice; then cover with water to a depth of one inch and cook covered over medium heat for about 40 minutes or until the meat is nearly cooked.

Stir in the prunes and add more water if necessary; then lower the heat, cover and cook for about 20 minutes or until the rice is tender but not mushy.
