Ingredients

Makes 4 servings

  • 1 tablespoon oil
  • 1 clove garlic, crushed
  • 4 green shallots, chopped
  • 2 small fresh red chillies, chopped
  • 1 tablespoon chopped fresh lemon grass
  • ½ teaspoon shrimp paste
  • 2 small chicken stock cubes, crumbled
  • 2 cups boiling water
  • 500g pumpkin, chopped
  • 400ml can coconut cream
  • 250g cooked small prawns, shelled
  • 1 tablespoon shredded fresh basil

Preparation (Some HTML is OK)

Heat oil in pan
Add garlic, shallots, chillies, lemon grass and paste, stir while cooking until shallots soft
Add stock and water, bring to boil
Add pumkin - simmer 10 mins
Stir in coconut cream - simmer 5 mins or until pumkin is tender
Add prawns, stir until heated through
Sprinkle basil
