Quick prawn paella

This amazing paella is totally delicious and really really easy to prepare.


Ingredients

Makes 4 servings

  • 200g bacon bits or pancetta
  • 250g mushrooms, washed and sliced
  • 1 onion, peeled and chopped
  • 1 red pepper, de-seeded and chopped
  • 2 cardamom pods
  • 1 bay leaf
  • 1 clove garlic, peeled and sliced
  • ½ tsp cinnamon
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 2 strands saffron
  • pinch salt
  • 150g frozen peas
  • 2 tomatoes, chopped
  • 250g cooked rice
  • 250g raw king prawns
  • juice half lemon
  • handful fresh parsley, chopped

Preparation (Some HTML is OK)

Place a large lidded frying pan on a high heat and add the bacon bits. Fry for several minutes until turning brown. Toss in the mushrooms and fry for a few more minutes until shiny and tender. Remove the bacon and mushrooms to a plate and set aside.
Add the onion and pepper to the pan, stir and reduce the heat to minimum. Place the lid on the pan and cook for 5 minutes.
Add the cardamon, bay leaf, garlic and all the spices and salt. Stir through.
Add the peas, tomatoes and 2 tbsp water. Place the lid on the pan and cook for 8 minutes.
Remove the lid and stir through the rice, squashing it with the back of the spoon to break up any lumps. When warm, add the prawns and cook lid on for 4 minutes.
Stir through the lemon juice and parsley and serve.
