If you like Raisins, you will LOVE this pie! The difficulty lies only in the crust.


Ingredients

Makes 8 servings

  • 1 Double Crust Recipe - Choose your favourite
  • 3 cups Raisins
  • ½ Tbsp Butter
  • 2 ½ cups Water
  • 2 Tbsp lemon juice
  • ½ C sugar
  • 3 Tbsp flour

Preparation (Some HTML is OK)

Prepare your pastry and set aside.

Combine raisins and water in a sauce pan and cook on medium heat until the raisins are puffy
Meanwhile... prepare your bottom crust and put it in a pie plate.
Combine flour and sugar well and add to the raisins when puffy; mix well and cook until the mixture thickens.
Meanwhile...prepare the top crust and set aside.
Add butter and lemon juice and stir until the butter melts
Pour the mixture into the uncooked pie crust
Top with crust and brush with milk / egg white and a sprinkling of sugar

Bake for 3o-40 minutes, or until golden, at 425 degrees celcius
