Divine summer summer salad ... serve as a starter or side dish
Ingredients
Makes 2 servings
- 1 zucchini, peeled into fine ribbons with a Y-shaped peeler
- 6 slices prosciutto ham
- 1 ball of mozzarella
- Handful of fresh mint leaves
- Handful of fresh rocket leaves
- 2tbs freshly squeezed lemon juice
- 1tbs extra virgin olive oil
- Fresh ground black pepper & sea salt for seasoning
Preparation
Mix the lemon juice with the olive oil and season.
Toss the zucchini in the dressing, adding the rocket & mint leaves.
Place on a plate, add the mozzarella and lay slices of prosciutto over.
