A deep brown very rich and moist banana bread. Wonderful toasted and slathered in butter. For a real treat serve with caramelised fried banana and mascarpone cheese.


Ingredients

Makes 6 servings

  • 1 cup soft brown sugar
  • 115g butter, softened
  • 2 eggs
  • 1 cup ripe bananas, mashed
  • 2 tblsp maple syrup
  • 2 tblsp milk
  • 2 cup flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ⅛ tsp salt

Preparation (Some HTML is OK)

Cream the sugar with the butter.
Add eggs, banana, syrup and milk and mix well.
Sift and add the dry ingredients and mix thoroughly.
Put mixture in 4x12 inch greased loaf pan.
Bake 45-50 minutes in 180 degrees oven.
Turn out and allow to cool.
