Very simple, very summery salmon. Oven bake and serve with new potatoes and something fresh and green.


Ingredients

Makes 2 servings

  • 2 salmon fillets
  • 4 slices of wholemeal or granary bread (crusts removed)
  • 1 lemon
  • fresh herbs (oregano or parsley)

Preparation (Some HTML is OK)

Turn the bread into breadcrumbs (I use magimix). Add a handful of fresh herbs (nothing too strong). Remove the wax from the lemon by washing in hot soapy water. Dry thoroughly and then grate the zest of the lemon into the breadcrumbs. Add freshly ground salt and pepper. Add the juice of the lemon to the mix.

Put the salmon fillets into a roasting dish and scoop on the breadcrumb mixture, pressing down gently with the spoon or your fingers. Cook in a hot oven (200'c fan) for approx 20 mins.
