"Save the wine for drinking" lamb stew

Improvised this today, and I think this is worth preserving and trying again.

There was this old forgotten bottle of really good wine from 1993 and I thought it would probably not be drinkable. I had planned to do a wine based stew, cook the leg in wine, then take it out, cut the meat in pieces and make a stew with the wine and meat.

To my surprise the wine was very good (a surprise since the last bottle from the same fron 95 had turned out to be have turned into cooking wine) so obviously I had to improvise something using less wine.

I decided to still cook the lamb on the bone but in the oven, then put it in the stew. This turned out really well as the meat had a meatier taste as a result.


Ingredients

Makes 4 servings

  • a piece of leg of lamb about 800g incl. bone (the kind you find a the frozen meats aisle) (500g without bone i would guess)
  • 1-2tbsp oil
  • 1.5 to 2.5 dl red wine (to taste, adjust broth if you use more or less)
  • 3 dl lamb or beef broth
  • 1 medium onion
  • 1 turnip (I think I'll use more next time)
  • 1 carrot
  • ½ bunch of celeri stalk, incl. leaves
  • 1 can of lentils, or dry lentils washed and cooked 15 minutes.
  • 4 cloves of garlic
  • 2tsp garlic powder
  • 1tbs rosemary
  • salt, pepper to taste

Preparation (Some HTML is OK)

Heat over at 150C
Heat 1tbs of oil in a pan, and quickly sear the lamb on all sizes
(this is optional but I like getting that "seared" taste and I think I can taste it - plus it tortures the dog)
Put the lamb in an oven dish
Pour 1/2 dl of wine in the pan to get all the meat flavour, then pour this over the lamb. Cover with a lid or foil
Cook lamb in the oven for 50 minutes to an hour

While it cooks:
Chop the onions
Cut all the vegetables - celeri and carrot in slices, turnip quartered then sliced
Prepare the lentils as per package (if you don't use canned)

Take the meat out of the oven and cut it in stew-sized pieces.
(make the dog very happy with bone and shreds)

Heat remaining oil in a pot and fry the onions
Add vegetables, garlic, meat, broth, wine, spices, lentils, and let it simmer 45 minutes. Add water to get the stew texture you like.

Serve in a bowl with crusty bread, potatoes or any way you like. Drink remaining wine :D

it's a bit hard to make a stew look tasty with a tiny camera and lame flash, but hey, it was better than it looks :DView on Flickr
