Tasty paella with a glass of white wine!!


Ingredients

Makes 4 servings

  • 1 teaspoon olive oil
  • 1 small onion chopped
  • 1 garlic clove crushed
  • 5 strands of saffron (in an egg cup of warm water)
  • 1 red pepper
  • 8oz arborio risotto rice
  • 1.5 pints fish stock
  • 4.5 oz frozen peas
  • 8oz cod fillet (more won't hurt and can be smoked or not)
  • 1 small pack of prawns
  • Fresh parsley to serve

Preparation (Some HTML is OK)

First, heat the oil and add the garlic & onion
Put the saffron into water and leave to stand
Dice up the pepper and add to the garlic and onion
When cooked, add the saffron, stock and rice.
Allow to boil.
Simmer until cooked, add small amounts of water if the mixture dries but the rice is still hard. Try not to over stir.
Add the cod, prawns & peas.
Serve with garlic bread. Yummy!!!
