An alliterative steak supper :)
Ingredients
Makes 2 servings
- For the steak
- 2 x sirloin steaks
- 2 tbsp of balsamic vinegar
- 1 garlic clove
- 1 tbsp dried chilli flakes
- For the salsa
- 1 red onion, finely chopped
- 2 tbsp olive oil
- 1 clove garlic, crushed
- 1 small chilli, finely chopped
- 350g baby plum tomatoes
- 1 tbsp balsamic vinegar
- For the salad
- 50g rocket
- 50g roquefort
- dash olive oil
- dash balsamic vinegar
- freshly ground black pepper
- Sourdough bread
Preparation
1. Mix together the vinegar, garlic, oregano and chilli flakes in a shallow dish. add the steaks and leave to marinate for up to 2 hours in the fridge.
2. Heat the olive oil in a frying pan and add the onion, garlic and chilli. Gently cook for 5 minutes until the onions are soft and golden.
3. Add the tomatoes and vinegar and cook on a high heat for 3-4 minutes until the tomatoes start to burst in the pan.
4. Place the rocket in a large bowl and add the roquefort. Add a splash of oil and vinegar and seasoning and toss the leaves around the bowl.
5. Remove the steaks from the marinate and season on each side. Cook the steaks to your preferred state.
6. Meanwhile, grill the bread.
