If you have fresh strawberries that are very ripe and about to turn this is a good way to treat them and they will then last a few days in the fridge. The natural juice that comes out of the strawberries is absolutely gorgeous. Got it from River Cottage where it was called macerated strawberries, which was a term I couldn't bring myself to use.


Ingredients

Makes 4 servings

  • 1 punnet strawberries
  • 2 tbsp caster sugar
  • 1 lemon

Preparation (Some HTML is OK)

Hull the strawberries and slice thickly. Put in a bowl and cover with the sugar. Squeeze in the juice of the lemon. Gently toss the strawberries in the juice until they are well covered. Leave for at least 1/2 an hour for the flavours to combine. Keeps for 3 days in the fridge.
