Cheese ravioli with garden fresh corn relish and crumbled bacon


Ingredients

Makes 4 servings

  • 1 bag frozen four cheese ravioli
  • 4 slices bacon
  • 1 cup chopped onion
  • 4 ears of corn, kernels cut from the cobs
  • 2 small zucchini
  • 2 cups chopped fresh tomato
  • fresh thyme
  • fresh oregano
  • fresh rosemary, chopped
  • Salt, pepper to taste

Preparation (Some HTML is OK)

Chop bacon into 1/2" pieces and saute until browned. Remove bacon from pan. Drain grease. Add olive oil to pan. Add onion and cook until translucent. Add corn kernels, zucchini, tomato and cook over medium about 10 minutes. Add herbs and salt/pepper to taste. Boil ravioli until it floats. Drain.

Place ravioli on plate, spoon over a mound of relish and sprinkle with crumbled bacon.
