Ingredients

- 2 large carrots, peeled
- pumpkin seeds
- sunflower seeds
- poppy seeds (optional)
- sultanas
- walnut oil
- lemon juice
Preparation
Grate the carrots on the fine side of the grater. Add a handful of pumpkin, sunflower, poppy seeds and raisins to taste. Drizzle with walnut oil and lemon juice, then mix well. You're done! Incidentally the carrot is full of antioxidants, the seeds have healthy doses of B vitamins and those omega-3s we hear so much about. Walnut oil is a great source of omega-3 also.
This salad actually improves over the first day or so - the carrot and sultanas soak up the dressing, and become even more tasty. For a variation, try using toasted sesame oil for a stronger flavour.
